Hummus is rich and creamy, and a great base for making a healthy pasta sauce high in protein. Sure it makes a great snack with crackers or a veggie tray. But it’s also a perfect ingredient for this dish to energize you on a fasting & abstaining day.

Ingredients
- 3 cups Farfalle (Bow Tie) pasta
- 2 Tablespoons olive oil
- 1/2 cup diced yellow onion
- 1 Tablespoon minced garlic
- 1 cup hummus
- 2 cups fresh baby spinach
- 1 cup cherry tomatoes
- 1/4 teaspoon salt
- 1/2 teaspoon sriracha sauce
- 1 1/2 Tablespoon lime juice
- Optional garnish: crushed red pepper flakes
Instructions
- Cook pasta according to package directions (about 12 minutes). Reserve 1/2 cup of the pasta water when draining.
- In a large skillet, heat the olive oil over medium heat and sauté the onion and garlic for 3 minutes.
- Add the baby spinach and cherry tomatoes, stir well, and sauté for 1 minute.
- Add the reserved pasta water and hummus and stir well to combine.
- Add the cooked pasta, salt, sriracha, and lime juice. Stir well and serve immediately.
