Flamin’ Hot Hummus Farfalle

Cook time: 20 minutes

Hummus is rich and creamy, and a great base for making a healthy pasta sauce high in protein. Sure it makes a great snack with crackers or a veggie tray. But it’s also a perfect ingredient for this dish to energize you on a fasting & abstaining day.

Ingredients

  • 3 cups Farfalle (Bow Tie) pasta
  • 2 Tablespoons olive oil
  • 1/2 cup diced yellow onion
  • 1 Tablespoon minced garlic
  • 1 cup hummus 
  • 2 cups fresh baby spinach
  • 1 cup cherry tomatoes
  • 1/4 teaspoon salt
  • 1/2 teaspoon sriracha sauce
  • 1 1/2 Tablespoon lime juice
  • Optional garnish: crushed red pepper flakes

Instructions

  1. Cook pasta according to package directions (about 12 minutes). Reserve 1/2 cup of the pasta water when draining.
  2. In a large skillet, heat the olive oil over medium heat and sauté the onion and garlic for 3 minutes.
  3. Add the baby spinach and cherry tomatoes, stir well, and sauté for 1 minute.
  4. Add the reserved pasta water and hummus and stir well to combine.
  5. Add the cooked pasta, salt, sriracha, and lime juice. Stir well and serve immediately.
